The crop hardly 35 hectolitres per hectare, one bottle max par vinestock, is carefully sorted out and de-stemmed. 2 weeks alcoholic fermentation in Burgundian open wooden vats, sawn off cone shape at controlled temperature with frequent punching-downs and a few delestages. The wine is then aged in cement vats untill it is ready for bottling.
