The fruits materials are harvests with care and sanitary.
To make BELLEVILLE SPARKING WINE we mix 50% of Clairette grape juice pre-ferment with 50% Marsane grape juice pre-ferment.
The clear mixture will be ferment softly in 3 weeks at 18-19oC.
After the filtration, the cold treatment at 5-6oC in 3 days help us to get the clear juice for easy filtration.
The clear wines are preserves in the inox tank in a few months before bottling with care. The fruit wine are refrigerated at 3oC in 1 day before mixing the grape fructose (MCR) and CO2 for food production.
The BELLEVILLE BRUT was bottling with care at 3oC
Eye: Bright golden colour with green hues.
Noze: aromatic on the nose with hints of Oriental spices.
Mouth: The mouth is delicate, very crisp with mentholated notes. A very clean and pleasant white.
Serve at: 8/10oC
Wine & Food: Use as appetizer, recommended with deserts.
Ageing: To drink preferably while young within 3 years after the harvest.
